Spicy pumpkin soup
French - In order to fully celebrate the autumn season (there is always something to celebrate) and as Halloween is coming pretty fast, such as dark and cold evenings, I thought a pumpkin soup would suit perfectly. In this soup I used 5 sorts of cucurbita: green & white pumpkins, a pomme d'or squash, a piece of butternut and two topinambour, plus a lot of spices and herbs.
Recipe for four:
- 1 green pumpkin
- 1 white pumpkin
- 1 pomme d'or squash
- 1 piece of butternut
- 2 topinambour
- 1 garlic clove
- 1 shallot
- 1 cm of ginger
- 1 turmeric
- 15 leaves of coriander (10 for the soup + 5 as a topping)
- 2 tablespoons of curry
- 1 tablespoon of nutmeg
- 10 pumpkin seeds (as a topping)
- organic vegetable broth
- salt & pepper
- On medium heat, place all your ingredients in a big pan and cover with water.
- Cook for at least 20 minutes. It will be ready when putting a knife on a squash, it falls.
- Once ready, put your pan aside and with a hand blender mix until right consistency.
- Pour in a bowl and add coriander and pumpkin seeds as toppings and salt and pepper to seasoning.
