Summer Strawberry Tart - Vegan

Summer is nearly coming and what a better way to celebrate the beautiful days to come than a Strawberry tart! Berries are flooding the organic food markets and I knew I wouldn’t be able to resist making simple berry tarts for much longer. Obviously I made it vegan, sugar-free and gluten-free. Oh and did you know that I've been living without sugar for a week now? I know it sounds crazy when you know me but I'm managing it pretty well actually and I feel great! No sugar, no maple-syrup, no agave nectar, no processed food like cookies, biscuit etc. no chocolate (yes, no chocolate) no cereals, it sounds incredible to me but it wasn't so hard after all. I tried to stop because every time that I eat something sweet I want to eat the whole thing and unfortunately I cannot stop myself, it's like a addiction that I have, so I prefer stopping it before I become obese! So, back to the real purpose of this post: the strawberry tart! The crust is super easy to make: use chopped hazelnuts and dates (yes, that's it) and for the filling I use soaked cashew nuts, coconut cream (to be dairy-free) lemon juice and strawberry and then top with fresh strawberries. Easy breezy beautiful isn't it? So let's start making it, here is the full recipe! 

Recipe for the crust:

  • 75 grams of chopped toasted hazelnuts 
  • 4 medjool dates (pitted)
  1. In a food processor, mix until you obtain a sticky paste
  2. Put a baking paper on your pan and using your fingers, place the dough on your pan paying extra attention to the edges. 
  3. Chill it during making the filling

Recipe for the filling:

  • 75 grams of cashew nuts (soaked for at least 2 hours)
  • Take the top of a coconut cream can that has chilled in the fridge for at least 4 hours. (When you carefully open your can, remove all the "hard" part, this is what you are going to use to make the filling) 
  • 7 strawberries, cut in half
  • 1/2 freshly squeezed lemon juice
  • 1 vanilla bean extract 
  1. Pour everything in a food processor or blender and mix until smooth.
  2. Pour filling into the tart crust and chill for at least 2 hours before topping with the strawberries. 

Topping:

  • 12 strawberries
  1. Once chilled enough, cut your strawberries in half or slice them and place them the way you like it more. 
  2. You can add mint, nuts or vanilla ice cream to make it even more beautiful. I made this recipe for my 7 years old cousin, so I didn't want to get to fancy but feel free to add what ever you like on top.
