Summer Cucumber Avocado Soup
Cold soup is the perfect meal during summer as it is refreshing, light and healthy. The smooth texture of avocado gives a thick consistency to the soup, which is balanced by the freshness of the cucumber. Spices and herbs added make it even more savory.
Recipe for two:
2 avocados peeled
1 cucumber peeled
1 scallion
1 clove garlic
4 tablespoons of freshly squeezed lemon juice
2 slices of ginger
1 cup of cold water
1 /2 cup of coconut milk
2 tablespoons of olive oil
1 pinch of chili flakes
5 leaves of coriander
5 leaves of mint
Salt and pepper
Put all the dry ingredients in a food processor and pulse until the mixture is thoroughly chopped.
Add the olive oil, the lemon juice and the coconut milk and continue to process until smooth.
Adjust with a cup of water if necessary
Chill for two hours.
Garnish and season with salt and pepper.
